THE BENEFITS OF OLIVE OIL

Praised since Antiquity for its medicinal virtues, olive oil is excellent for health, due to its richness in omega-9, monounsaturated fatty acids (oleic acid in the lead, representing between 55 and 80% of total fatty acids) and, to a lesser extent, in polyunsaturated fatty acids and saturated fatty acids. Olive oil also contains other molecules which, although present in reduced proportions, have a major effect on its properties (taste, aroma, colour) and medicinal benefits.

What is it really?

Numerous epidemiological studies agree on the beneficial effects on cardiovascular health of regular consumption of extra virgin olive oil, with a measurable reduction in the risk of mortality. This effect is all the more pronounced when the oil is of good quality. Beneficial effects in terms of cholesterol are also often reported, as well as anti-inflammatory effects. This is not surprising, since sterols and triterpenes are known to be involved in the proper management of blood cholesterol. Extra Virgin Olive Oil is also rich in polyphenols, antioxidants that slow down cell ageing, and vitamins K (blood clotting and bone strength) and E (skin elasticity). So don’t hesitate to cook with olive oil every day.
