Grilled cod and small sautéed vegetables

Ingredients (for 4 people)

  • 4 cod fish fillets
  • 2 carrots
  • 2 zucchinis
  • 1 red pepper
  • 6 asparagus
  • 6 garlic cloves
  • 1 bunch of parsley
  • 10 cL + 2 tbsp. of olive oil

Préparation : 45 min

1. Cut the carrots, zucchinis and the pepper into sticks. For asparagus, cut them into 3 or 4 pieces.

2. In a frying pan, pour 10 cL of olive oil, add the crushed garlic and place the cod fillets and cook on low heat for 30 min.

3. In another pan, pour 2 tbsp. of olive oil and cook at high heat all vegetables (pepper, carrots, zucchinis, and asparagus) for 5 minutes. Then cook at low heat for 15 to 20 min. On the last 5 min, cover the pan. Your vegetables are ready!

4. Place some vegetables in the center of a plate and gently place the cod fillet on top. Decorate with chopped parsley and a drizzle of olive oil before serving.
