« Financiers » with apricots and verbena


For 9 “financiers”
- 4 egg whites (140 g)
- 120 g of sugar
- 90 g of almond powder
- 30 g of wheat flour
- 1/2 teaspoon of baking powder
- 40 g of olive oil or 5 cL
- 2 tbsp of chopped lemongrass verbena (or basil)
- 4 or 5 apricots
Preparation : 15 min – Cooking: 15 min
1. Pour the egg whites into a bowl and whisk them lightly with a fork.
2. Add the sugar, almond powder, flour and baking powder. Mix vigorously with a whisk.
3. Then stir in the olive oil and the chiseled verbena leaves.
4. Divide the preparation into small rectangular molds. (You can also use mini cake molds by filling only 1/3).
5. Cut the apricots into quarters and place 3 slices on each financier.
6. Cook 15 min in the oven preheated to 180°C. They should be lightly golden.
